Meet Adrien Louyat, Bar Manager

Adrien Louyat has already plied his trade for thirteen years behind the bar of L’Observatoire. He shares its secrets and the cocktails responsible for its renown.
Why is L’Observatoire so unique?

Its unimpeded view of the city and casual-chic ambiance are major assets. Though the bar’s very essence resides in our team: young, upbeat professionals who love their work.

The qualities of a good mixologist?

Their main quality is undoubtedly creativity! Essential for conjuring up enjoyable, well-balanced and visually appealing cocktails. Though human contact is also vital. A smiling mixologist will bond more easily with the client.

How do you compose the drinks selection?

We include a wide range of spirits to please as many guests as possible. For cocktails, we strive constantly to innovate, between classic recipes and original flavours. We also invite clients to try our mixologists’ suggestions, and surprise them with cocktails they won’t find elsewhere.

What inspires you when creating a new cocktail?

First of all, the seasons. Then, we like to work as a team, experimenting with new ideas, tasting each other’s creations, and searching for something unique. Our Terra Bella cocktail is a perfect example: we invented a ‘‘Pomme d’Amour’’ syrup and added strawberry, chilled and lightly spiced gin. Surprising for the tastebuds, and even visually!
